Three Ingredient Vanilla Coconut Milk Ice Cream

Yields: 3-4 servings

  • 1 can full fat coconut milk
  • 3 tbsp honey (or maple syrup)
  • 1 tsp vanilla extract

Combine all ingredients in a saucepan over medium heat, stirring until mixture comes to a low boil.

Remove from heat and allow to cool, then place in refrigerator for at least 2 hours.

Remove from refrigerator, pour into ice cream maker** and use as directed.

Voila!

**Add any additional mix-ins a few minutes into churning if you so desire (nut butter, chocolate chips, coconut, etc.)

  • Preparation time: 10 minutes
  • Cook time: 2 hours
  • Total time: 2 hours 10 minutes

    I don’t really have the tall girl problems (I’m relatively tall but my legs are short) but I totally feel you on the thigh to waist ratio. Somebody needs to start making jeans for girls with quads! And I love the simplicity of this. Sometimes I’m feeling fancy and will do the whole custard with egg yolks into ice cream thing but typically this is how I do it too. So simple and yet so tasty!
